Two large trout fillets cleaned and boned.
4 or 5 strips of lien smoked bacon
2 tablespoons of chopped Parsley, chives and thyme in equal parts
2 tablespoons of olive oil
Salt-and-pepper
2 cloves of garlic finely minced.
1 tablespoon of capers
4 slices of lemon
Juice of half a lemon

Directions:

In a bowl combine all the ingredients except the bacon and lemon slices. Once mixed divide the stuffing evenly between the two fish. Fold the fillet over unto themselves and wrap the bacon around each filet to hold them together firmly. Once wrapped slip the lemon slices under the bacon on the top side. Place the trout fillets in and oiled cast-iron pan and cook in a preheated oven at 425° for about 20 to 25 minutes.

If you're camping you can do this by placing it in a oiled cast-iron Dutch oven and setting it directly into the coals. Great for the campfire. Picks up that lovely smoky flavor.
