5 Tbs. Peanut Butter
3 Green Onions diced (save some for garnish)
3 Tbs. Soy Sauce
2 Tbs. Rice Vinegar
1/2 tsp. Cayenne Pepper
1 inch piece of fresh Ginger
2 Garlic Cloves, minced
Cilantro for garnish
2 Boneless Chicken breasts, chopped into chunks
1 C. of Rice, cooked (2 cups cooked)

Directions:
Directions:
Mix all ingredients except for chicken and cilantro in a small pot and simmer until warm but not boiling.
Meanwhile, chop the chicken and stir fry in a Tbs of oil in a non-stick pan until browned. Remove the ginger from the sauce and add the sauce to the chicken. Simmer over low heat until the chicken is done, approx. 10 minutes.
Serve over hot rice garnished with the rest of the green onion and cilantro.
