4 - 5 lbs ripe tomatoes, scalded, peeled and chopped
1 large spanish onion, chopped
1 large green pepper, chopped
1 medium red pepper, chopped
5 1/2 oz. can of tomato paste
3/4 cup white vinegar
1/4 cup brown sugar
1 tbsp. course pickling salt
2 tsp. paprika
1/4 tsp. garlic powder
2 Jalapeņo peppers chopped

1. Mix everything in a large pot and bring to a boil. Boil over medium heat (uncovered) for 1 hour, stir occasionally.

2. Taste, add more Jalapeņos if desired. Fill sterilized jars 1/4" from top and seal.
