1 15 oz can jack Mackerel (reserve broth)
1 large egg
3/4 cup corn meal
1/4 cup self-rising flour
1/4 onion, chopped finely
1/3 cup green pepper, chopped finely
1/2 tsp salt
1/2 tsp pepper

Directions:
Directions:
Separate the jack mackerel from the broth.
Crumble the mackerel and mix with egg, onion, green pepper, salt and pepper.
Add cornmeal 1 tsp at a time to make a stiff dough.
Stir in some of the broth if to stiff.
Pat out dough into 7 or 8 individual patties.
Dust each patty in cornmeal
Preheat ¼ to ½ inch of cooking oil in a heavy cast-iron skillet on medium heat
Place the patty in the oil and fry on both sides until golden brown.
Place patty on paper towel to drain the oil
