2 lbs. ground turkey
1 lb. ground pork
onions
bell peppers
1 can black beans, rinsed & drained
1 can Rotel tomatoes
1 lb. Velveeta
chicken broth, as needed
chili pepper
paprika
garlic granules
cumin
oregano
salt & pepper
Mozzarella cheese &/or Mexican blend cheeses

Brown meats; drain. Add onions, peppers, beans, Rotel & Velveeta. Moisten with broth as needed. Add spices - chili pepper, paprika & garlic, don't be too shy. The cumin, oregano, salt & pepper, be a little shyer. Of course, to taste as you like it !!
Grease a casserole dish & line with flour tortillas. Ladle 1/2 of mixture in to shell lined pan. Sprinkle grated cheese on top. Put another layer of tortillas on top of cheese. Put remaining meat mixture on top of tortillas. Sprinkle more cheese on top. Cover with foil. Bake in moderate 350F oven until warmed through & cheese melted. May remove foil 10 min. before removing from oven to brown cheese slightly.
