1 Lg roaster Chicken
6 Cloves Garlic
6 Sprigs fresh Rosemary
2 Tbs EVOO
1/2 tsp salt & pepper

Directions:
Directions:
Preheat oven to 400º. Rinse chicken and pat dry. Starting a neck, use finger tips and separate the skin from chicken without tearing. Rub under skin with oil, salt & pepper. Spread 3 sprigs of rosemary and half of garlic under skin.
Put remain garlic and rosemary inside cavity. Rub remaining oil onto outside skin.
Truss chicken with twine and put on rack in roasting pan. Bake for 15 min; lower oven temp to 350º . Continue to bake 1-1 1/2 hours until meat thermometer reads 165º. Remove from oven and cover with foil, let rest 10 min before serving.
