1 C Shortening
1 Egg
2 C Flour
2 tsp baking powder
1/2 tsp salt
1 C Cooked Mashed Carrots
Frosting:
3 C Powder Sugar
Juice of 1 Orange ( 1/4 c)
1-2 Tbs Grated Orange Rind
Directions:

Cookies:
Blend shortening, sugar & eggs. Sift together dry ingredients; stir into creamed mixture along with carrots and vanilla. Mix thoroughly; drop on to a cookie sheet.
Bake @ 375º for 15 min.
Frosting:
Mix sugar into orange juice until very smooth and right consistency for frosting, mix in grated orange rind. Spread on cooled cookies.
