3/4 Stick Butter (6 Tbs)
7 Med Yellow Squash, cut in 1/2 lengthwise, then sliced 1/2" thick
1 Med onion,chopped
1 Md Bell Pepper, chopped
1 Can Cream Style Corn
1 Lg egg, lightly beaten
salt & pepper
1 Sleeve Ritz Crackers, crumbled

Directions:
Directions:
Heat oven to 350º. Lightly butter casserole dish.
In a Lg pot of boiling water, cook squash until tender, drain well.
In a Lg skillet, melt butter; add onion & bell pepper, cook until tender( about 7 min). Stir occasionally.
Add onion mixture, cream corn, & egg to the squash & mix well. Add salt & pepper to taste.
Pour in Casserole dish and scatter cracker crumbs over the top.
Bake until set, about an hour.
