2 c cornbread, crumbled & very dry
1/2 c butter
2 eggs, slightly beaten
2 c squash, boiled & drained
1 can (condensed) cream of chicken soup
1 medium onion, chopped
3 ribs celery, finely diced
1/3 medium bell pepper, diced (optional)
Salt, pepper, herbes de provence (or sage or poultry seasoning) to taste

Preheat oven to 350*. Casserole dish, buttered. In heavy skillet, cook the onions, celery & bell pepper in the butter until onions are clear. Remove from heat, set aside. In a large mixing bowl, mash the squash up well. Add the cornbread crumbs, condensed soup & eggs, mixing well. Pour in the onion mixture, emptying the skillet of all the butter, too. Stir this until mixed well. Add salt, pepper & other chosen seasonings to taste. Pour into greased casserole. Bake at 350* until it is nicely browned.
