Dressing:
1/3 c. olive oil
2 T balsamic vinegar (or lime juice, or lemon juice, or red wine vinegar)
1 tsp ground cumin
1 pinch ground oregano
garlic salt to taste
salt/pepper to taste

Salad:
1 can (15 oz) black beans, drained & rinsed
1 can (15 oz) great northern beans (optional), drained & rinsed
2 c. frozen corn kernels, thawed (Trader Joe's frozen ROASTED corn works well)
1 med red bell pepper, chopped
1 c red onion, chopped
2 small jalapenos, seeded & chopped
1/3 c fresh cilantro, chopped

In a pint jar with lid, shake all dressing ingredients (or whisk together in bowl). Place all salad ingredients in a large bowl and toss with dressing. Cover and refrigerate and let stand (toss occasionally) at least 1 hour or up to 4 hours before serving. Toss before serving.
