Dressing:
2 T Fresh Lemon Juice
2 T Balsamic Vinegar
2 tsp Country Style Dijon Mustard
1/4 tsp Salt
1/2 c. Extra Virgin Olive Oil

Salad:
1 - 6oz.Bag Fresh Baby Spinach
1 head Radicchio, torn into bite size pieces
8 oz Button Mushrooms, sliced
2 Green Onions, sliced
1/2 c. or more Roasted Cashews, chopped

Directions:
Directions:
In a pint jar with tight lid, shake all salad dressing ingredients. Refrigerate while preparing the salad.
Combine all salad ingredients in a large bowl and toss with dressing just before serving.Salt and pepper to taste.
