Ingredients: 2 lb. potatoes, peeled and cut into medium pieces Milk Butter Salt and Pepper 1 tbsp. vegetable oil 1 large onion, skinned and chopped 1 lb. ground beef 1/4 pint beef stock 2 tbsp. Worcestershire sauce 2 tsp. dried mixed herbs

Directions:Cook the potatoes in boiling water, drain and mash with milk and butter - basically mashed potatoes. Heat the oil in a saucepan and add chopped onion. Cook until translucent. Add ground beef and cook until browned. Add beef stock, seasonings, herbs and Worcestershire sauce. Bring to the boil and simmer. Spoon the meat mixture into an ovenproof dish and top with mashed potato. Mark the top with a fork (wavy lines) and bake in the oven at 190ºC (375ºF) mark 5 (gas oven) for about 30-35 minutes until potato is crisp and browned on top. Alternatively, if potato surface needs more browning you can use broiler for just a minute or two but be careful not to leave it too long. Serve with vegetable of choice. My family prefer peas with this dish. |

Notes: I grew up eating this dish. It would usually be served for Monday dinner as left-over Sunday dinner roast beef or lamb would be used and minced up to provide the meat layer. Lamb can be used instead of ground beef. The dish is then renamed by the more familiar term "Shepherd's Pie".
