8 oz mushrooms
½ t. garlic (minced)
10 oz spinach (frozen)
4 lg. eggs
1 c. milk
2 oz. feta cheese
¼ c. parm. cheese
½ c. mozz. Cheese
salt & pepper

Directions:
Directions:
Preheat oven to 350 degrees. Thaw spinach. Slice mushrooms. Saute mushrooms, garlic and salt & pepper in skillet until mushrooms release all their moisture and no more water remains in the skillet. Spray pie dish with non-stick spray. Spread spinach on bottom of the pie dish. Add mushrooms & feta. Whisk together eggs, milk, parmesan, and pepper. Pour mixture into pie dish. Sprinkle dish with shredded mozzarella. Baked until golden brown – approximately 45 minute to 1 hour.
