Scampi Butter
1 lb. raw, peeled, deveined shrimp
1 t. white wine
2 oz. asiago cheese [cut into chunks]
1 avocado
Spaghetti Squash
Arugula [garnish]

Scampi Butter:

¼ lb. unsalted butter [softened]
1 t. garlic [minced]
2 t. red onion [minced]
1 t. parsley [chopped]
½ t. garlic powder
1 t. salt
¼ t. pepper
Dash of white pepper
Dash of Worcestershire sauce
1 lemon [juiced]

In bowl, mix together ingredients with wire whisk until well blended.

Spaghetti Squash:

Slice squash in half (lengthwise). Scoop out seeds with a spoon as you would a pumpkin. Then submerge both halves in boiling water and cook for about 25 minutes. Remove, drain & cool with cold water or an ice bath. Then use fork to scrape the cooked squash out of its skin. Fluff & separate the squash into spaghetti like strands.

Scampi:

Place 2/3 scampi butter in large sauté pan over high heat & melt. Add in shrimp and cook for about 2 minutes, moving shrimp around in pan. Drizzle with white wine & cook until shrimp are opaque, only about another 2 minutes. Remove from heat & stir in remaining scampi butter, cheese & avocado chunks. Serve with hot spaghetti squash & garnish with arugula.
