¾ c. butter (softened)
1 c. sugar
1 t. baking powder
1 egg
¼ t. mint extract
green food coloring [several drops]
2 ¼ c. flour
½ c. Oreo cookies (approx. 6 cookies)
1 t. shortening
½ c. semisweet chocolate pieces

Beat butter in a large mixing bowl, add sugar and baking powder and beat until combined. Add egg, mint, and enough food coloring to tint it a light mint green. Beat in as uch flour as you can with the mixer. Stir any remaining flour in with wooden spoon. Divide dough in half. Cover & chill for about an hour or until it is easily handled.

Roll one half of dough between two sheets of waxed paper into an 8x7 rectangle. Sprinkle ½ of crushed cookies evenly over dough to within ¼ inch of all sides. Roll up like a jelly roll starting from the short side. Remove bottom sheet of wax paper and pinch to seal. Repeat. Wrap dough & refrigerate for approx. 4 hours.

Remove one roll of dough from refrigerator. Unwrap & reshape if necessary. Cut dough in ¼” thick slices. Place 2 inches apart on ungreased cookie sheet. Bake @ 375° for 8 – 9 minutes. Cook on cookie sheet. Remove and cool completely on wire racks. Repeat with remaining roll of dough. If desired melt together chocolate & shortening in saucepan over low heat and drizzle over cookies.

Makes approx. 50 cookies.
