1 stick unsalted butter
1 ¼ c. sugar
2 lemons [1 T. juice – 2 grated lemon peels]
1 lg. egg
1 ½ c. four
¼ t. baking soda
¼ t. salt


Directions:
Directions:
Preheat over @ 350° and line 3 large cookie sheets with parchment paper. Mix butter, 1 c. sugar, lemon peel & juice until fluffy. Mix in the egg. Add flour, baking soda, salt. Place the remaining ¼ c. sugar in bowl. Roll heaping teaspoons of dough into balls, then roll in sugar. Place on the prepared cookie sheets a few inches apart. Bake until golden around the edges (about 15 minutes). Transfer Cookie sheets to rack to cool.
