½ c. flour
1 T. cornstarch
1lb. turkey cutlets
½ t. salt
¼ t. pepper
¼ c. olive oil (divided)
¼ c. sage
½ lg. shallot
½ c. dry white wine
2 tomatoes
¼ heavy cream
1 c. chicken broth
¼ c. Parm Cheese
8 oz. spaghetti

Directions:
Directions:
Stir flour & cornstarch together in shallow dish. Sprinkle turkey with salt & pepper. Dredge turkey in flour mixture & shake off excess. Cook turkey in 2 T hot oil in a large skillet over medium heat for 2 – 3 minute a side. Drain on paper towels. Heat remaining 2 T in skillet. Add sage and cook 2 – 3 minutes. Remove sage & add shallots and sauté for 2-3 minutes. Add wine & cook 3 -4 minutes until reduced and pan is deglazed. Add broth, tomatoes & cream. Add turkey. Bring to a boil and then reduce to simmer for 10 minutes or until thick. Sprinkle with cheese & add crispy sage leaves.
