3 clove garlic
1oz. Parmesan Cheese
8oz. linguine pasta
2 T. olive oil
1 c. roasted red peppers
12 oz. shrimp
¼ t. red pepper flakes
½ t. kosher salt
½ t. pepper
3 T. unsalted butter
4 c. baby spinach leaves
½ c. chicken broth

Directions:
Directions:
Cook & Drain Pasta. Preheat large sauté pan on medium 1-2 minutes. Place oil and garlic in pan; cook 3-4 minutes or until the garlic edges being to turn golden. Add peppers, shrimp, pepper flakes, ¼ t. salt, ¼ t. pepper; cook & stir 1 minute. Add broth; cook 2-3 minutes or until reduced by half and shrimp have just turned pink & opaque. Reduce heat to low; stir in butter, spinach, cheese, pasta and remaining ¼ t each of salt & pepper. Toss until butter & cheese melts and spinach wilts. Serve.
