1 eggplant
2 eggs
2 T. water
½ t. salt
1/3 c. flour
½ c. Italian breadcrumbs
1 c. olive oil
32 oz. can sauce (w/ oregano, garlic, salt & pepper)
¼ lb. Parmesan cheese
8 oz. mozzarella cheese

Directions:
Directions:
Peel eggplant – cut into ¼” slices. Mix together egg, water & salt. Dip eggplant in flour then egg mix then breadcrumbs. In skillet heat ¼ c. oil. Cook eggplant until browned. Drain on paper towel.

Assembly:
Pour ½ sauce on bottom of layer of eggplant, Parmesan and mozzarella cheese. Repeat ending with cheese. Top with sauce.
