Fresh beets
Chopped nuts
Raisins
1 can crushed pineapple, drained
Miracle Whip Lite

Directions:
Directions:
Cut tops off fresh beets, rinse
Leave 1/2 inch of stalk so they won't bleed as much when boiled
Boil beets until you can stick a fork into them; skin will slip off at this point
Grate beets with hand grater (coarse)
Add chopped nuts, raisins, and pineapple
Mix in a little Miracle Whip Lite
Optional - sprinkle sugar to taste

Refrigerate

I learned to make this in Russia. Russian beets are very sweet and my garden beets aren't always very sweet, so I might sprinkle a little sugar if needed for taste. Russians have walnuts and dried smoked plums; I substitute pecans and raisins. Even Neil Carroll likes beets this way!!
