2 T unsalted butter
2 T oil
5 bunches spinach, stemmed, washed and still wet
Kosher salt
Freshly ground white pepper
2 T flour
1 C creme fraiche or 1 C heavy cream

Directions:
Directions:
in a large pot melt butter and oil over medium low heat. Add the spinach with a sprinkle of water. Cover and cook, stirring once or twice until the spinach is wilted and bright green, about 5 minutes. Season with salt and pepper to taste and sprinkle with flour. Cook, stirring frequently, to cook off some of the3 raw flour taste, 203 minutes. Stir in the cream and cook, stirring frequently, until slightly thickened about 5 minutes.
