6 large leeks, trimmed to 8" and halved lengthwise then crosswise
1 C stock
1/4 C dry white vermouth
kosher salt
freshly ground white pepper
1/2 C shredded Gruyere cheese
1/4 C grated parmesan cheese
2 TB unsalted butter cut into small pieces

Preheat over to 350º. Butter a 2 quart gratin dish. Hold each leek under cold running water and rinse and drain well. Lay the leeks, cut side up, in the prepared dish. Pour the stock and vermouth over them and season with salt and pepper. Cover with aluminum foil and bake until the leeks are tender, about 30 minutes. Remove from oven.

Preheat broiler. Uncover the dish and sprinkle the Gruyere and parmesan evenly over the leeks and dot with butter. Place under broiler 3-4" and grill until the top is golden brown, about 2 minutes. Serve warm.
