4 strips of bacon diced
1 lrg. onion, chopped
2 lbs. beef stew meat in small cubes
1/2 c. flour
2 cans slice mushrooms
1 c. burgundy or other red wine (plus more for drinking lol)
8 oz can tomato sauce
1-2 whole bay leaves
1/4 t. each: Thyme, Marjoram, salt, pepper
2 cans pitted ripe olives, halved
2 T chopped parsley

Directions:
Directions:
Cook bacon and onion together in dutch oven or other heavy pot until light brown.

Dredge meat in flour; add to pot and brown slowly on all sides.

Add wine, tomato sauce, and seasonings.

Stir frequently, and add water as needed (aprox. 2 c) before covering.

Simmer until meat is tender. Shortly before serving, add olives, parsley (if it was fresh) and mushrooms.

Serve over buttered noodles or rice.
