8 (1/2 inch thick) slices of Fresh Mozzarella
6 Fresh cloves of garlic
2 tab Italian seasoning
4 tab EVOO (Extra Virgin Olive Oil)
8 slices of sourdough bread
1 tomato (sliced into 8)

Step 1
Place garlic, EVOO and Italian seasonings inside food processor.

Step 2
Thinly slice the tomatoes and lay them on a paper towel. Sprinkle with salt and let sit to release any water, about 10 minutes. Pat dry.

Step 3
Lay out 4 slices of the sourdough bread on a work surface. Layer each with garlic spread, 1 slice of cheese, making sure that they cover to the edges. Follow with 2 slices of tomato and then 1 more slice of cheese. Spread the remaining 4 slices of bread with the remainder of the garlic spread and close.

Step 4
Prepare nonstick pan with butter or margarine

Step 5
Place 2 sandwiches into a nonstick medium skillet over medium heat. Cook until the bread is evenly golden brown, about 2 minutes. Flip and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining 2 sandwiches.
