1 lb. assorted baby bell peppers (about 24) halved and seeded
1 small diced onion
1 poblano chile pepper, seeded and diced
3 minced garlic cloves
1/2 t. each; ground cumin, dried oregano and ancho chile powder
1 t. chipotle chile powder
kosher salt
1/2 lb. ground pork
1/4 cup chopped fresh cilantro
3 oz. muenster cheese, diced (3/4 cup) or shredded

Directions:
Directions:
Add the 7 ingredients after bell peppers and 1 t. of salt to the skillet. Cook and stir until the onions and poblano pepper are tender, about 8 minutes. Add the pork and cook for about 6 minutes, until brown. Remove from heat and let cool.
When cool, add cilantro and cheese.

Preheat oven to 425º

Stuff peppers with about 2-3 teaspoons of pork mixture. Bake for 15-20 minutes or until cheese melts. Season with salt.
