6 1/2 lb. bone-in pork shoulder roast (butt)
Any kind of mustard
City BBQ pork seasoning or any kind of pork seasoning
City BBQ barbeque sauce or any kind of sauce

Directions:
Trim excess fat from pork. Pat pork dry with a paper towel. Place on a large piece of plastic wrap. Spread mustard liberally on pork. Coat pork with spice mixture. Wrap tightly and place on a tray. Chill at least one hour or over night.

Preheat oven to 325º

Unwrap pork and place on a rack in a roasting pan. Roast uncovered for 4 hours. Wrap pork in double thick foil and return to rack and roast another 2 hours (190º internal temperature).

Remove from oven and let rest in foil for 30-60 minutes.

Using 2 forks, pull pork apart (don't shred) removing any large pockets of fat as you pull. Serve with BBQ sauce.

I put the pork on top of foil in a roasting pan (without the rack) and then fold the foil over after 4 hours. It soaks up the juices.
