1 1/2 pound ground beef (lean is best)
1 medium raw potato peeled and finely grated
1 medium onion finely grated
1/2 cup milk
salt and pepper
Sauce:
3/4 cup grape jelly
1 1/4 cup gluten free chili sauce (can use some gluten free Ketchup)
1/2 cup water

Directions:
Directions:
Combine beef, potato, onion, milk, salt, and pepper. Roll into meat balls. Brown in a skillet or in the oven on a sheet pan that has sides. Place the meatballs in a oven proof baking dish. Mix sauce ingredients together and pour over meatballs. Stir so the meatballs are covered in sauce. Bake, uncovered, in the oven at 350 º F for about 1 hour until the meat balls are cooked through and the sauce has thickened somewhat.

Brenda also makes these and she says you can use some ground pork, or turkey as part of the meat. She often adds a bit of orange juice instead of all water in the sauce. She also says that if you are not concerned with making the sauce gluten free or are very good at reading labels the sauce is a great place to use little bits of stuff you have in the fridge like bbq. sauce, Thai sauce, etc. Add some hot sauce or chipotle peppers if you want some more spice.
Can be cooked in a crock pot or reheated in the microwave.
Freezes well. These are a favorite of Claire Roberts.
