Ingredients: Dry ingredients: 2 cups white rice flour 1/2 cup potato starch 1/2 cup tapioca flour 1/3 cup cornstarch 1 tbsp. Xanthan gum 1 1/2 tsp. salt 1 tbsp. instant yeast 1 tbsp. gluten free baking powder Make sure flours are at room temperature.
Liquids: 1 whole egg 2 egg whites 2 tbsp. canola oil 1 tsp. cider vinegar 2 tbsp. meringue powder dissolved in 1/4 cup warm water 1 additional cup of warm water

Directions:Preheat the oven to 375 º F and lightly oil a 5 X 9 inch loaf pan. Mix dry ingredients together in a good sized bowl. Stir or whisk well. Dissolve the meringue powder in the 1/4 cup warm water. Mix together with the other liquid ingredients. Add the liquid ingredients to the dry ingredients and beat for 10 minutes in a Mix Master (i.e. a stand mixer). Scrape the dough into the loaf pan. Cover with plastic and place on top of a hot water bottle, in the sun, or heating register and cover with bath towel to hold heat. Let rise to the top of the pan. Bake 40 to 50 minutes or until lightly browned. Cool on wire rack before slicing. Brush with butter . |
