2 pounds ground beef
1 cup dry bread crumbs
1 ten oz. tin of tomato soup
2 eggs
1 medium sized onion chopped
1 1/2 tsp. horse radish
2 tbsp. prepared mustard
1/2 tsp. salt
1/2 tsp. pepper
1 - 2 tbsp. ground flax (optional - adds fiber)

Mix together and bake in a meatloaf loaf pan at 375 º F - 400 º F, depending on oven.
If using relatively fatty ground meat and a regular loaf pan you may need to drain some of the fat off while it is cooking. A meatloaf pan is just a loaf pan with an insert that has holes in the bottom and allows the excess fat to drain away from the meatloaf as it is cooking.
This recipe can be cut in half for a smaller meat loaf.

This is the meat loaf that Mom made for us on the farm. Linda's husband Jim Johnson was surprised when she first made it for him as his mother made the same recipe when he was a kid.
Brenda sometimes uses tomato sauce instead of tomato soup. Linda uses finely chopped green pepper instead of onion. Edith follows the recipe. Each to their own taste.
