2 cups seedless raisins
2 cups hot water (1st. amount for raisins)
1/2 cup brown sugar
1/4 tsp. salt
3 oz butterscotch pudding mix - not instant
1/2 cup cold water (2nd amount for pudding mix)
1/2 tsp. grated orange rind or more to taste
piece of butter
unbaked pie shell and pastry for a lattice topping

Directions:

Simmer the raisins in the 2 cups hot water for 10 minutes till plump and tender. Add brown sugar, salt, and the pudding mix that has been dissolved in 1/2 cold water. Simmer the mixture until thickened. Pour into the unbaked pie shell. Grate orange rind over top and dot with small dabs of butter. Cover with lattice topping and bake at 400º F until the pastry is cooked.
