10 cups chopped ripe tomatoes
2 cups chopped onions
2 cups sliced or chopped celery
1 cup chopped green pepper
1 cup chopped red pepper
1 1/2 cup white vinegar
1 1/4 cup granular Splenda (or equivalent amount of stevia)
1 tbsp. salt
1/2 tsp. ground allspice
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/2 tsp. ground black pepper
1/2 tsp. crushed red pepper flakes (or to taste)

In a stainless steel or enamel sauce pan, combine all ingredients. Bring to a boil; reduce heat and simmer, uncovered until the desired consistency (about 2 hours). Stir frequently so it does not stick. Spoon into hot sterilized jars, leaving a 1/2 inch head space. Apply lids. Process in a boiling water bath for 15 minutes. Cool. Store in a cool, dark location.

Can substitute a bag of pickling spice for all the spices in the recipe. Boiling water bath should cover the jars by about an inch. Per tbsp.
