8 large cucumbers - peeled and seeds removed
6 large onions
18 green tomatoes
1 bunch celery
2 green peppers
2 red sweet peppers
1 hot red pepper
pickling salt
5 cups white sugar
3 cups white vinegar
2 tbsp. flour (or corn starch)
1 tsp. turmeric
2 tsp. dry mustard

Directions:
Directions:
Put all veggies except the celery through grinder or chop with food processor. Chop the celery in the food processor or with a sharp knife. Be careful to not make the vegetables too fine. Put the vegetables in a nonreactive bowl, sprinkle with pickling salt (non iodized) and let sit over night. Drain and rinse well.
Put drained vegetables in a large pot with 5 cups sugar and 3 cups white vinegar and boil for 1 hour. Mix together 2 tablespoons flour, 1 teaspoon turmeric, and 2 teaspoons dry mustard. Stir into veggie mixture and boil for 10 more minutes being careful that it does not stick. While hot pour into sterile jars and seal.

Can decrease the number of green tomatoes and increase the number of cucumbers. Can also use peeled and seeded zucchini as part of the vegetables. Can omit hot pepper or use hot pepper flakes instead
