1 c. chopped onion
3 garlic cloves, minced or smushed
6 c. chicken broth
1/4 c.uncooked white rice
1 tsp. ground cumin
1 16 oz. can Great Northern beans, rinsed and drained
3 c. chopped boneless cooked chicken breast
1/2 c. coarsely chopped fresh cilantro
salt & pepper
condiments: chopped seeded tomato, diced avacado,fresh lime juice

Directions:
Directions:
Use small amount of oil and saute onion and garlic until translucent. Add broth,
rice, cumin and beans. Bring to a simmer for 12 to 15 minutes. Stir in chicken, cilantro,salt and pepper and simmer for a few minutes more. Remove from heat and stir in tomato, avocado and lime juice. Good served with tortillas or hot cheese rolls.
