1 package yeast (1 tbsp)
1/4 cup water, lukewarm
1 tbsp of sugar
1 eggs, unbeaten
1/4 cup minced onion
1 cup creamed cottage cheese, warmed
1 tbsp butter
2 tsp dill seed
1 tsp salt
1/4 tsp baking soda
2 1/4 cups of plain flour, not sifted

Directions:
Add yeast and sugar to the warm water and allow to sit for five minutes. While the yeast is proofing, warm the cottage cheese slightly and very slowly. Over- heating will result in a hard, rubbery ball which is not what you want. Using a large mixing bowl, combine yeast liquid, warmed cottage cheese, onion, butter, dill, salt, baking soda and egg. Add the flour gradually and combine thoroughly. Dough should be stiff. Cover and allow to rise for two hours or more until the dough has doubled. Punch it down. Grease two 8 inch round casseroles. Turn the dough into casseroles and let rise again. Dough should rise until it is 2 to 3 inches higher than the rim of casserole. Preheat oven to 350º. Place dilly bread in oven and bake for about 50 minutes. Make sure the bread has a crisp, brown crust. Do not under bake. Remove from oven and if desired, brush with melted butter and sprinkle with salt before dilly bread cools.
