2 cups sifted flour
1 1/2 cups sugar
3 tsp baking powder
1 tsp salt
1/3 cup cooking oil
1 cup milk
1 1/2 tsp flavouring essence
2 eggs separated

Directions:
Directions:
1. Mix flour, baking powder, 1 cup sugar and salt in a bowl.
2. Add oil,1/2 c milk and flavouring and mix.
3. Add the remaining 1/2 cup of milk and the two egg yolks and mix.
4. Make a stiff meringue of 2 egg whites and 1/2 cup of sugar.
5. Fold in the meringue. Pour batter in two 8"X9" layers tins and bake for 30-35 minutes at 180ºC.
