1/4 c grape seed or sunflower oil
1/4 c dark chocolate chips
1 1/4 c plus 1 tbsp. flour
1 tsp baking soda
1/2 c unsweetened cocoa powder
1/4 tsp salt
1 1/8 c lt brown sugar, packed
2/3 c dried sour cherries
1 whole egg
2/3 c 1% milk
1/2 c plus 1 tbsp. reduced fat Greek yogurt
1 tsp vanilla

Preheat oven to 350. Line cupcake pan with cupcake liners.

Combine oil and chocolate chips in a small bowl. Heat in microwave, stirring occasionally until chocolate has melted. Set aside to cool about 15 minutes.

In a large mixing bowl, stir together flour, baking soda, cocoa powder, salt, brown sugar and dried cherries.

In a separate bowl, whisk together the egg, milk, yogurt and vanilla.

Pour cooled chocolate mixture and yogurt mixture in the bowl with the flour mixture. Fold ingredients together till just combined. Don't over mix or the muffins won't rise properly.

Fill cupcake liners. Bake 20-25 minutes or until a toothpick comes out clean. Remove from oven. Cool slightly before serving. Store tightly wrapped at room temperature up to 2 days.

To make this healthier, I used whole wheat flour, coconut oil and coconut sugar. They were so chocolaty that it overpowered the taste of the cherries. Next time I'll add walnuts instead, a lot cheaper than the cherries! There will be a definite next time because these are really good!
