1 c unsalted butter (room temperature)
2c sugar
4 mashed overripe bananas
4 eggs
2 1/2c flour
2 tsp baking soda
1 tsp salt
1c chopped pecans (optional)

Directions:
Directions:
Preheat oven to 350 degrees. In a medium bowl, mix together flour, salt and baking soda. Set aside. In a large bowl, beat together butter and sugar until well blended. Beat in banana and then eggs. Add nuts. Add the combined dry ingredients and stir just until blended. Spread evenly into two prepared medium (not the usual large) loaf pans. Bake until a wooden toothpick comes out clean for approximately 1 hour. Cool in the pans for 10 minutes and turn onto wire rack to cool completely. Freezes beautifully for one month.
