(Roughly) 2 cups of halved brussel sprouts
1 red bell pepper, diced
2-3 TBS cooked bacon pieces
2-3 TBS red onion, diced
1 TBS minced garlic
1 pinch of black pepper
1 pinch of sea salt
Drizzle of Olive, Avocado, or similar Oil.

Optional: 1-2 TBS shaved/shredded parmesan

Heat Oven to 350º F.

Place brussel sprouts in a bowl with a tiny it of water, plastic wrap, then microwave for about 2 mins.

Then take all ingredients except for the oil & parmesan and mix together. Spread evenly out on cookie sheet.

Drizzle with Oil & sprinkle parmesan cheese on top.
Bake for 25 mins.

I've made this several times and it's a HIT :) I love to drizzle balsamic reduction on top to give it an extra kick - but it's totally fine with out it as well. Makes a great side to Lemon Salmon or Grilled Chicken!
