(Makes TWO Cheesecakes)
4 pkg. (8 oz each) Cream Cheese, softened
1 cup of sugar
1 tsp. vanilla
4 eggs

Directions:
Heat oven to 325º F.

Beat cream cheese, sugar, & vanilla with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
Bake for 55 min, or until center is almost set. Remove from oven and cool. Then refrigerate for four hours, serve.

Nothing fancy here - but a tried a true recipe. Super easy and super creamy and yummy!
If you want to make a crust, the recipe is
1-1/2 Cups Graham Cracker Crumbs
3 TBSP Sugar
1/3 cup melted butter

You just mix all that together and press it into the pan. If you need a quick substitute for graham crackers - use granola or granola-y cereal and put it through a food processor! :)
