Spinach and Ham Lasagna Recipe

6 lasagna noodles (cook el dente)
10 oz. chopped frozen spinach
2 c. skim milk
3 tbsp. corn starch
1/2 c. chopped onion
1-1/2 c. ham or turkey ham (chopped in very small pcs)
1/2 to 1 tsp. Italian seasoning
1 c. cottage cheese
1 c. shredded mozzarella
Parmesan cheese

Directions:
Cook spinach according to package directions, drain. Very important to get all the moisture out of the spinach. I usually press with paper towel in strainer.
Over low heat, combine corn starch with milk until smooth. Heat until it thickens, then add onions Cook for several minutes, stirring constantly. Put 2 tbsp. of this mixture in the bottom of a greased 10 x 7 baking dish - you could probably double for a 13 x 9. Add ham to creamy mixture.
Put 3 noodles in bottom of dish, then 1/3 sauce, cooked spinach, 1/3 sauce, cottage cheese. Sprinkle with parmesan. Do another layer of noodles,remainder of sauce, mozzarella cheese and then sprinkle all with parmesan. Salt & pepper as needed.
Bake uncovered at 375º for 35 minutes. Let stand for 10 minutes before cutting.
