1 cup of cornflour
3/4 cup of plain flour, sifted
1 teaspoon of baking powder
1/2 teaspoon of bicarbonate of soda
1/4 teaspoon of salt
120g of unsalted butter, really soft
1/3 cup of caster sugar
2 free range egg yolks, at room temperature
1/4 teaspoon of vanilla bean paste
To serve,

Dulce de leche, roughly 200g but you might like a bit more!
Roughly 50g of melted chocolate, milk or dark

1. Cream the really soft butter and sugar together for about 3 minutes or until light and fluffy. Then add the vanilla and egg yolks and mix to combine. Now add the cornflour, plain flour, baking powder and soda and the salt. Add the water and then mix into a dough. Cover with cling film and place in the fridge for an hour.
2. When your ready to bake the biscuits, preheat your oven to 180 degrees C. Line two large baking trays with baking parchment or another non-stick paper. Lightly flour a work surface, then roll the dough out to 1/4 inch thickness. Using a plain or fluted 2 inch cookie cutter, cut rounds out of the dough- you should get roughly 30 rounds. Then place these on the tray and bake in the preheated oven for 10-12 minutes or until just lightly coloured- watch the cookies as they will change colour very quickly in the last few minutes!
3. Once cooked, cool completely on a wire. To decorate, fill half the cookies with some dulce de leche. Then sandwich together with the other cookie halves. Then now either roll in coconut flakes or dip in chocolate.
