4 eggs
1 c. oil
1 16 oz. can pumpkin (not pie filling)
2 c. flour
1-2/3 c. sugar
2 tsp baking powder
1 tsp salt
1 tsp baking soda
2 tsp cinnamon

Icing:
8 oz. cream cheese
1 stick butter (soft)
1 tsp vanilla
powdered sugar

Directions:
Directions:
Mix all cake ingredients together. Pour into greased jelly roll pan. Bake at 350º for approximately 25 minutes.

Icing:
Mix all ingredients, add powdered sugar until "peaky".
When completely cool, spread over cake.

This works great for a cookie exchange because you can cut small and this makes quite a few pieces.
Also great if you have to make something ahead - freezes well.
