1/2 cup olive oil
2 tbsp Dijon mustard
1 tbsp garlic ( I use the kind in the jar if I don't have fresh)
6 "shakes" low sodium soy sauce

Directions:

Mix all ingredients and put in zip lock bag. Save just a little out to drizzle on fish later.
Add cod fillets, salmon or any other kind of fish and marinate all day in the refrigerator.

Sometimes I dip pieces in seasoned bread crumbs before baking, but Tami seared her marinated fish in a pan with no crumbs and it was delicious.

I put a little olive oil in the bottom of the dish so fish doesn't stick. Bake at 400º for 16-18 minutes until fish flakes with a fork.

This recipe turns non-fish eaters into fish eaters!! Heather never ate fish before until I had her try this and now she does this when she wants fish. It's absolutely scrumptious!
