1 # navy beans
1 lg. onion, chopped
2 tsp. salt
1 tsp. pepper
ham or turkey ham cubes
1 can tomato soup

Directions:
Directions:
Soak beans in water overnight, be sure to use enough water because the beans will absorb. If you don't have that much time, you can use the quick soak method on the instructions.

Drain soaking water from beans, add 10 cups fresh water. Add remaining ingredients in crock pot and cook all day. Check to see along the way if you've added enough salt.

You can also do these on the stove if you're home or you can do them in a pressure cooker in approximately 35-40 minutes. I like to do them a little early and let them sit a little before serving, helps mingle flavors and adds a little time so soup can thicken a little

This is one of those soups that almost taste better as a leftover so don't be afraid to make it one day and serve a day or two later. Sometimes I add some small diced carrots.
Great with corn bread!
