Stock:
1 turkey carcass
5 quarts water, or as much as needed
1/12 c chopped onion
3 stalks of celery
1 carrot
pinch of thyme
pepper
1 bay leaf

Soup:
1 1/2 lb carrots, cut into chunks
2 onions diced
6 stalks celery, cut into 1/2 inch chunks
1 cup barley
1/2 c chopped mushrooms ( I use small can of mushrooms)
2 bay leaves
2 tsp salt
1 tsp dried marjoram
1/2 tsp black pepper
pinch of dried thyme

Directions:
Directions:
I put all stock ingredients in my crock pot late at night on low. If using stove, put all ingredients and bring to boil. Then, simmer for about 2 hours, removing fat and adding water as needed.

When stock is done, drain, cool carcass and pick meat from bones. Refrigerate meat until needed.

Mix all soup ingredients with stock and bring to boil. Simmer until barley is cooked, about 1 hour 15 minutes. Add turkey meat and cook additional 10 minutes. Remove bay leaves before serving.

If you have an opportunity to used smoked turkey, this recipe is beyond fabulous. We can't stop eating it. I have not made it with regular thanksgiving turkey.
