8 Tortillas
1 can black beans, drained and rinsed
2 sweet potatoes, peeled and cubed
½ c. onion, minced
½ c. spinach, fresh or frozen and drained
2 c. shredded cheese
1 T. olive oil, divided
1 T. chili powder
½ T. cumin
1 T. sea salt

Directions:
Directions:
1. Pre-heat oven to 400º. Place diced sweet potato in oven with 1/2 c. water. Steam bake for 30 minutes until softened then mash leaving chunks.
2. Meanwhile, saute onions in half the olive oil until brown. Add beans, spices and remaining oil. Cook until covered and fragrant. Add sweet potato mash mixture and stir.
3. Stir in spinach and stir, cooking for 3 more minutes until combined.
4. Pre-heat Panini press or grill pan. Spread mixture on half a tortilla. Top with cheese. Fold and grill.
5. After 3-5 minutes remove from press and cut. If using grill pan, flip after 2 minutes and complete cooking on other side.
6. I love to top mine with guacamole or salsa.
