1 and 1/2 lb. boneless lamb shoulder or chicken breasts
1/4 c. each of dry red wine, lemon juice, and olive oil
2 cloves garlic, minced
1 Tbsp. each dried oregano and rosemary
2 tsp. grated lemon rind
1 bay leaf
1/4 tsp. pepper

Trim excess fat from lamb or chicken; cut meat into cubes, set aside.
In shallow, nonmetallic dish whisk together remaining ingredients.
Add meat cubes to marinade; (I use a ziplock bag for marinating)
Refrigerate covered, at least 4 hours or up to 24 hours; turning occasionally
Just before serving, remove meat from marinade, reserving marinade.
Thread meat onto skewers. Note: if using wooden skewers, soak them for an hour or so before putting meat on them.
Place skewers on oiled barbecue grill; grill over medium-high heat 6 to 8 minutes, turning often and basting with marinade halfway through cooking time, until meat is tender and cooked.
