1 can (15-16 ounces) garbanzo beans, drained and liquid reserved
1/2 c. sesame seed paste (tahini)
1 clove garlic, crushed
3 Tbsp. lemon juice
1 tsp. salt
chopped fresh parsley
pita bread wedges or low-fat crackers or raw veggies for dipping

Directions:

Place some of the reserved bean liquid, the sesame seed paste and garlic in blender or food processor. Cover and blend on high speed until mixed. Add beans, lemon juice and salt. Cover and blend on high speed, stopping blender occasionally to scrape sides if necessary, until uniform consistency.
Spoon dip into serving dish. Sprinkle with parsley. Serve with pita bread wedges

This is delicious AND low fat!! If it's too thick when blending, you can add more of the reserved liquid from the garbanzo beans. We like it thicker, so I start with a little of the reserved liquid, increasing as need be.
