4lb boneless beef chuck roast, trimmed and cut into 2 inch pieces
1/4 cup flour
1 tsp salt
1 tsp lemon pepper
2 Tbsp Olive oil
2 cups chicken broth
4 cloves garlic, minced
1 onion, chopped
8 oz sliced fresh mushrooms
1 (14.5 oz) can fire roasted diced tomatoes

Directions:
Directions:
Toss beef with flour, salt, and lemon pepper in a large bowl. Cook beef, in batches, in hot oil in a large skillet over med high heat 8 minutes or until browned on all sides; transfer to 5-7 quart slow cooker. Add 1 cup broth to skillet, and stir with a wooden spoon to loosen browned bits; pour into cooker. Add garlic, onion, mushrooms, tomatoes, and remaining broth to cooker. Cover and cook on low 6-8 hours until beef is tender. Serve over rice.
