1 1/2 c. brown long grain rice
2 1/2 c. chicken stock
salt and pepper
2 buds minced garlic
2 T.+ 2 T. sesame oil
2 T. + 2 T.butter
2 eggs beaten lightly
1/3 lb. pork slices from tenderloin or boneless pork chops
Ah So sauce
1/2 onion chopped
2 T. soy sauce
2 T. rice vinegar
1/4 tsp. ginger
1/2 tsp.sugar
4 thin sliced scallions tops and white separated
1/4 c. frozen peas
1/2 c. julienne carrots
1/2 red pepper sliced thin

Saute chopped onion and rice in a bit of oil in a sauce pan. Add the chicken stock to cover and cover the saucepan. Reduce the heat and let the rice absorb the stock. Check every 10 min. and add more stock if the until the rice is el dante. Set aside to cool. Refrigerate over night or for a few hours until it is cold. Brush the pork with the Ah So sauce and roast until done, about 5 min. on each side. Let cool. In a small bowl mix the soy sauce, rice vinegar. ginger and sugar.Dice the barbecued pork into a small dice. Slice the pepper and scallions. Heat a Wok or stir fry pan. Add the sesame oil and butter until melted. Saute the pork. Add the eggs and scramble. Remove the eggs. Add the white part of the scallions, the carrots and red pepper. Cook about 1 min. until it is just slightly soft. Remove the pork and the vegetables form the pan. Add the second set of oil and butter to the pan. Add the minced garlic. Saute the cold rice. Add the sauce from the small bowl and mix well.. Add salt and pepper to taste. Chop the scrambled eggs and add to the rice. Add the vegetables. Mix in the thawed peas. They will cook in the hot rice. Last mix in the green part of the scallions. Mix just until heated.
